Vegan cheesecake


Hi!

Omdat ik gisteren eindelijk weer eens zin had om iets te bakken, maar ik natuurlijk nog steeds bezig ben met de vegan challenge én toevallig net silken tofu had gekocht in de supermarkt, besloot ik om vegan cheesecake te maken. Om eerlijk te zijn dacht ik niet dat dit echt lekker zou worden, tofu heeft toch een heel specifieke smaak en ook cheesecake heeft zijn eigen smeuïge textuur die je misschien niet kan evenaren met tofu. Nou, dus wel!
Hij is echt zo ontzettend lekker geworden!! En ook een goede structuur, wow. En dat kan ik jullie niet onthouden natuurlijk, helemaal niet na alle verlekkerde reacties gisteren op Instagram en facebook. (btw de foto's zijn vreselijk, maar het was donker/ Sorry the photos are terrible, but it was really dark...)





Nodig:
- Bakvorm van 20 cm.
- Blender of keukenmachine
- Oven (voorverwarmd op 200 graden)

Ingrediënten: 
Bodem
- 2 cups koekjes voor de bodem. Ik had speciaal vegan koekjes gekocht bij de biowinkel.
- 1/4 cup rijststroop (je kan ook maple syrup of agavesiroop gebruiken)
- 1/4 tl amandel extract

Vulling
- 1 pakje silken tofu
- 1/3 cup suiker
- 1 el tahini of amandelpasta
- 1/2 tl zout
- 1/2 tl amandel extract
- 1 el maizena opgelost in 2 el amandelmelk(of een andere plantaardige melk)
(eventueel wat citroenschil voor een extra zuurtje)

Swirl
- Bakje frambozen
- 1/3 cup suiker of suikervervanger

1. Verwarm de oven voor op 200 graden.
2. Verkruimel de koekjes in de keukenmachine met de rijststroop en amandel extract. En smeer dit uit over de bodem van de taartvorm. Bak dit 5 minuten op 200 graden.
3. Meng de rest van de ingrediënten in de blender of keukenmachine en giet dit over de bodem.
4. Doe de frambozen met de suiker in een steelpannetje en verwarm totdat het gaat borrelen. Prak ondertussen de frambozen met een houten pollepel fijn zodat het echt een frambozen puree wordt. Ik heb expres de zaadjes er niet uit gezeefd omdat ik dat wel een bepaalde charme vind hebben. Het is rustieker en eerlijk gezegd ben ik gewoon te lui om het door een zeef te halen ;).
5. Voor een mooie swirl schep je met een lepeltje de frambozenpuree op de taart en dan haal je de lepel erdoorheen zodat ze puree mengt met de taart. Beetje lastig uit te leggen, volgende keer ga ik proberen te filmen terwijl ik het doe.
6. Bak de taart 30/35 minuten op 200 graden. Hierna is hij niet helemaal stijf. Zet hem dus nog een uurtje in de koelkast om op te stijven. En dan....Yummm!


Because I finally felt like baking something again, but i'm still doing the vegan challenge I decided to try and make a vegan cheesecake. The day before I bought silken tofu(just by accident I didn't know what it was and wanted to try it) and that's exactly what goes in this cake. I wasn't sure it would turn out nice, cheesecake has such a creamy texture, would I be able to recreate that with tofu?!
And oh my, yes I could!


What do you need?
- 20 cm cake tin
- Blender or food processor 
- Oven (preheat at 200 degrees Celsius)

Ingredients:
Bottom
- 2 cups cookies (I used vegan cookies I bought at a health food shop)
- 1/4 Rice syrup (or you can use maple syrup or agave if you like)
- 1/4 tsp almond extract

Filling
- 1 container of silken tofu
- 1/3 cup of sugar
- 1 tbsp tahini or almond butter
- 1/2 tsp salt
- 1/2 tsp almond extract
- 1 tbsp cornstarch mixed with 2 tbsp almond milk or any other milk you like (rice, wheat, soy etc)

Swirl
- 1 container of raspberries
- 1/3 cup of sugar

1. Preheat the oven on 200 degrees celcius.
2. Mix the cookies with the syrup and extract in the food processor until it's a clumpy mass.
3. Spread the cookie mix out on the bottom of the baking tin. and bake for 5 minutes at 200 degrees.
4. Mix all the ingredients for the filling in the blender or food processor and pour it over the cookie bottom.
5. for the swirl, mix the raspberries and sugar in a pan and heat it until it starts to bubble. Meanwhile crush the raspberries with a spoon to make a smooth mix. I left the seeds in on purpose, I like the rustic feeling.
6. For a nice swirl, drop several spoonfuls of the mix on the filling en start making round with your spoon, mixing the raspberry mis with the filling. (I find this hard to explain, i'll try to film it next time I do it)
7. Bake the cake for 30/35 minutes on 200 degrees and put it in the refrigerator for an hour to totally set. And then....Yummm!
